Chocolate Chip Pear Bread

Amount Measure Ingredient -- Preparation Method

1 3/4 cups whole wheat pastry flour

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cardamom

powdered egg substitute -- to equal 1 egg, or

flaxseed mixture to equal 1 egg

1/2 cup packed light brown sugar

3/4 cup 1% soy milk -- soured with 3 tsp. vinegar

1/4 cup applesauce -- or prune puree or Wonderslim

1 teaspoon vanilla extract

1 cup bosc pear -- cored and cut into ¼-inch dice

1 cup semisweet chocolate chips -- (use mini-chips

if available)

 

 

Preheat the oven to 350ºF.

 

In a mixing bowl, combine the first 5 ingredients plus the optional

cardamom. In another bowl, combine the next 5 ingredients and beat

together. Make a well in the center of the dry ingredients and pour

in the wet mixture. Beat together until smoothly combined. Stir in

the diced pear and chocolate chips. Pour the batter into an oiled 9-

by 5- by 3-inch loaf pan. Bake for 45 to 50 minutes, or until the

top is golden and a knife inserted in the center tests clean.

NOTES : I have revised this recipe to make it vegan and have replaced

the oil with a substitute. It makes a nice gift bread and every one

always loves it. I have had good success making it in my Zojirushi

bread machine, also.
