Guest guest Posted September 12, 2002 Report Share Posted September 12, 2002 open face grilled cheese * Exported from MasterCook * Cheese Dream Recipe By :Deborah Madison Serving Size : 1 Preparation Time :0:00 Categories : 2002-09-12 Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 slice white or wheat bread butter thinly sliced sharp cheddar cheese tomato slice salt and freshly ground pepper pickled beets -- or pickled cucumbers and onions with dill Preheat a broiler. Toast the bread and lightly butter it. Cover it completely with the cheese, top with a round of tomato, and season with salt and pepper. Broil until the cheese is melted and bubbling. Remove and cur into quarters on the diagonal or into fingers. Serve immediately accompanied with the beets or cucumbers and onions. According to the late James Beard, fancier versions appeared in hotel tearooms where rashers of bacon were crisscrossed on top of the sandwich and pickles were served on the side. But this simpler version 15 the one I grew up with. The idea of the cheese dream is blissfully simple and suitable to an array of american condiments and cheeses, especially some of the new spreads like olive paste.
