Fried Green Tomato Sandwich

Amount Measure Ingredient -- Preparation Method

2 large green tomatoes

1 cup cornmeal -- seasoned with

salt and pepper

vegetable oil or olive oil -- for frying

2 sourdough rolls sliced in half

green goddess dressing or mayonnaise

thinly sliced onions -- preferably sweet ones

watercress or romaine lettuce leaves

 

Slice the tomatoes about 3/8 inch thick. Coat both sides of the slices with the

cornmeal.

 

In a skillet over medium-high heat, pour in oil to a depth of 1/8 inch. When

hot, fry the tomato slices, turning once, until the cornmeal is golden and the

tomatoes are tender but not mushy, about 10 minutes in all.

 

Toast the rolls and spread them with the dressing or mayonnaise. Layer the

tomatoes, onions, and watercress on the bottom halves of the rolls. Set the tops

in place, press down lightly, slice in half, and serve.

NOTES : This is not an american classic, but it's made from one -- fried green

tomatoes. They seem like the ideal sandwich filling to me. Green goddess

dressing is delicious in this sandwich in place of mayonnaise.
