Mixed Vegetable Curry

Amount Measure Ingredient -- Preparation Method

10 ounces potatoes -- diced

4 ounces carrots -- diced

3 teaspoons oil -- (or triple)

1 large onion -- chopped

1 teaspoon Turmeric

2 teaspoons Cumin Seed

2 teaspoons Ground Coriander

Cayenne Pepper -- a good pinch

2 teaspoons Garlic Granules

4 ounces zucchini (courgettes) -- diced

1 3/4 cups canned tomatoes

4 ounces frozen peas

Salt -- to taste

 

Preparation and cooking time: 30 min.

Parboil the potatoes and carrots for 10 minutes until just tender. Drain.

 

Heat the oil and fry the onion until softened. Add the Spices and fry for

another 2 minutes. Stir in the potatoes, carrots, courgettes and tomatoes.

Simmer for 10 minutes until tender. Stir in the peas and salt and cook for

another 5 minutes before serving. Serves 4
