Pilau Rice with Mixed Nuts

2 tablespoons ghee or vegetable oil

6 cardamom -- bruised

5 each whole cloves

1 cinnamon stick -- broken in half

1/2 teaspoon black peppercorns -- lightly crushed

1/4 teaspoon saffron threads

1 1/2 cups basmati rice

3/4 teaspoon salt

1/2 teaspoon orange flower water (optional)

2 1/2 cups water

2 tablespoons golden raisins

1/4 cup roasted cashews

1/4 cup pistachio nuts

 

ALLOW 5 mins prep time; 25 mins cook time

 

HEAT the ghee or vegetable oil in a wide heavy bottom saucepan. Stir in the

cardamoms, cloves, cinnamon stick and peppercorns and fry over a gently heat,

stirring constantly, for 2 minutes, until fragrant. Add the saffron threads and

rice to the pan and fry, stirring constantly, for a further minute.

 

ADD the salt, orange flower water, if using, and measured water. Stir well to

mix. Bring to the boil, then reduce the heat, cover the pan and cook the rice

gently for 15 minutes without removing the lid.

 

REMOVE the pan from the heat and lightly loosen the rice grains with a fork. All

the water should have been absorbed. Stir the golden raisins into the rice,

cover the pan with a clean dry cloth and allow the rice to cook in it's own heat

for a further 5 minutes.

 

STIR both the cashews and pistachios into the rice just before serving. Serve

hot. Serves 4 to 6.

 

TIP - orange flower water is a delicate flavoring which, although not essential,

enhances the subtle flavor of the rice.

 

VARIATION: Add 1/4 cup red lentils, cooked until tender, but firm and doubled in

volume. Drain; toss with rice.
