1 1/2 cups milk

1 tablespoon Dijon-style mustard

1/2 cup coarsely chopped watercress leaves

1/4 teaspoon pepper

2/3 cup cooked wheat berries

1 1/2 cups shredded Swiss cheese (6 ounces)

1. Line the bottom of pastry shell with a double thickness of foil. Bake in a

450 degree F. oven for 8 minutes. Remove foil; bake 4 to 5 minutes more or until

NOTES : Watercress gives this quiche a peppery bite while wheat berries and egg

whites give it a healthy face-lift. If you have trouble finding wheat berries at

your local health food store, substitute 2/3 cup cooked wild rice.
