Soba Noodles Primavera with Miso

Amount Measure Ingredient -- Preparation Method

15 ounces extra-firm tofu -- rinsed, drained and patted

dry

salt

8 ounces soba noodles

1 tablespoon olive oil -- optional

1 medium red bell pepper -- thinly sliced

1 large onion -- sliced

2 cloves garlic -- crushed with a garlic press

1 tablespoon grated, peeled fresh ginger

1/4 teaspoon crushed red pepper flakes

16 ounces broccoli florets -- (1 bag) cut into 1½ "

pieces

10 ounces shredded carrots -- (1 bag)

1/4 cup red (dark) miso paste

2 green onions -- thinly sliced

 

Cut tofu horizontally in half. Cut each half into 1-inch chunks; set

aside.

 

Heat large saucepan of salted water to boiling over high heat; add

noodles and cook as label directs.

 

Meanwhile, in nonstick 5- to 6-quart Dutch oven, heat oil (or a small

amount of liquid) over medium-high heat until hot. Add red pepper

and onion, and cook 10 minutes or until golden, stirring

occasionally. Add garlic, ginger, crushed red pepper, and tofu, and

cook 1 minute, stirring.

 

To tofu mixture, add broccoli, carrots, and ¼ cup water; heat to

boiling over medium-high heat. Reduce heat to medium; cook, covered,

7 minutes or until vegetables are tender.

 

When noodles have cooked to desired doneness, remove ¾ cup noodle

cooking water and reserve. Drain noodles and return to saucepot.

With wire whisk, mix miso paste into reserved noodle cooking water

until blended.

 

To serve, toss noodles with tofu mixture, green onions and miso-paste

mixture.
