This recipe, for example, suggested 1 tablespoon oil. I modified that to read 1 teaspoon ( from 1 to 3 tsp) .... * Exported from MasterCook * Beet and Watercress Salad with Walnuts Recipe By :Reader's Digest Serving Size : 4 Preparation Time :0:00 Categories : Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 pounds fresh beets 1/2 teaspoon grated orange zest 1/2 cup orange juice 1 tablespoon no salt added tomato paste 1 teaspoon olive oil -- (1 to 3 tsp) 1/2 teaspoon dijon mustard 1/2 teaspoon salt 4 cups packed watercress -- large stems trimmed 1/4 cup coarsely chopped walnuts 1. BEETS: Preheat the oven to 450F. Wrap each beet separately in foil. Place on a baking sheet and bake in preheated oven for 1 hour and 15 minutes or until the beets are tender. To save time, microwave the beets completely or partially. 2. Unwrap the beets and when cool enough to handle, using a paper towl to keep your hands from getting stained, slip the beets out of their skins. Cut each beet into 8 wedges. 3. SALAD: In a medium bowl, whisk together the orange zest, orange juice, tomato paste, oil, mustard and salt. Add the beets, watercress and walnuts, tossing well to combine. Serve at room temperature or chilled.
