Guest guest Posted September 20, 2002 Report Share Posted September 20, 2002 from vibrant life mag * Exported from MasterCook * Green Rice with Spinach Recipe By :Vibrant Life Serving Size : 4 Preparation Time :0:00 Categories : Rice & Grains {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 tablespoons canola oil 1 medium onion -- diced 3 cloves garlic -- minced 1 green bell pepper -- seeded and diced 1 jalapeno pepper -- seeded and minced 2 cups water 1 cup long-grain brown rice 1 tablespoon dried parsley 1/2 teaspoon salt 2 cups chopped fresh spinach 2 tablespoons minced fresh cilantro In large saucepan, heat oil. Add onion, garlic, bell pepper, and jalapeno. Saute for 5 to 7 minutes, until onions are tender. Add water, rice, parsley, salt. Cover. Simmer over medium heat for 40 minutes. Stir in spinach and cilantro, and cook over low heat for about 5 more minutes, until rice is tender.
