Rocket and Herb Pesto

Amount Measure Ingredient -- Preparation Method

4 tbsps freshly chopped rocket

4 tbsps freshly chopped coriander

2 tbsps freshly chopped flat-leaf parsley

1 tsp chopped red chilli

4 tbsps olive oil

1 tbsp sesame oil

1 tbsp vegetable stock

1 tbsp pine nuts -- chopped finely

85 g vegetarian Pecorino cheese -- grated

sea salt and black pepper -- to taste

 

Combine the ingredients in a medium bowl until well mixed. Serve with pasta

or gnocchi.
