Tasty Beanburgers

Amount Measure Ingredient -- Preparation Method

2 tbsps olive oil -- plus more for frying burgers

1 onion -- chopped

2 garlic cloves -- sliced finely

1 tsp cumin seeds -- optional

2 tbsps chopped parsley

1 400g can black-eyed or cannellini beans -- drained

50 g fresh breadcrumbs

1 free-range egg

pinch chilli powder

sea salt and freshly ground black pepper

 

Heat the oil and soften the onion and garlic, covered, for 5-6 minutes. Add

the cumin seeds and cook for a further 3 minutes. Off the heat stir in the

parsley and the beans. Mash until smooth, or blend in the food processor.

Stir in the breadcrumbs and then the egg, mixing thoroughly. Season to

taste with chilli, salt and pepper.

 

Shape into four burgers and fry in hot, shallow olive oil for 3-4 minutes on

each side or until lightly browned. Serve inside warm fresh baps, with a

little chopped salad or a slice of cheese.

NOTES : So quick and easy to prepare, these beanburgers make a scrumptious

lunch.

 

Jo's note: These are really yummy, but might need more breadcrumbs to help

them stay together. Also good made with tinned red kidney beans.
