Oriental Fritter

Amount Measure Ingredient -- Preparation Method

4 tbsps plain flour

1/2 tsp sea salt

8 tbsps water

115 g tinned straw mushrooms, or tiny button

mushrooms -- sliced

1 lg free-range egg -- beaten lightly

85 g beansprouts

2 spring onions -- sliced crosswise

2 tbsps soy sauce

1 tsp unrefined sugar

2 tbsps vegetable oil

1 clove garlic -- chopped finely

freshly chopped coriander (or flat-leaf

parsley if preferred) -- to garnish

 

In a large bowl, sift the flour with the salt and stir in the water

gradually to make a smooth batter. Add the mushrooms, egg, beansprouts,

spring onions, soy sauce and sugar, and stir thoroughly into the batter.

 

Heat the oil in a medium frying pan and cook the garlic until golden over a

medium heat. Pour the batter into the pan and allow it to spread. Fry

until the underside is crisp and golden. Cut the fritter into four pieces,

then turn them over and cook the other side until golden and crisp. Serve

garnished with a few leaves of coriander or parsley.
