Spicy Peanut Noodles with Satay Cauliflower and Broccoli

Amount Measure Ingredient -- Preparation Method

350 g rice noodles

700 g mixed cauliflower and broccoli florets

5 tbsps sesame oil

225 g oriental mushrooms -- such as shitake or oyster

1 tbsp crunchy peanut butter

1/2 lime -- juice of

1 tbsp yellow bean sauce

1 tbsp soy sauce -- (1-2 tbsp) to taste

1 lg garlic clove -- chopped finely

1/2 tsp chilli powder

6 spring onions -- cut diagonally into 1 cm pieces

2 tbsps finely chopped peanuts

fresh coriander -- (or flat-leaf parsley if

preferred) to garnish

1 quantity Satay Sauce -- (1-2 quantities)

 

In a large bowl soak the noodles in warm water according to packet

instructions. Drain.

 

Meanwhile steam the cauliflower and broccoli florets until they are al dente

for about 5 minutes. In a large frying pan heat 2 tablespoons of sesame oil

over high heat and sauté the mushrooms for 1-2 minutes. Mix the peanut

butter with the lime juice, the remaining sesame oil, yellow bean sauce, soy

sauce, garlic and chilli powder. Toss the sauce into the drained noodles,

then add the spring onions, mushrooms and peanuts and toss again. Pile onto

a large serving plate. Top with the steamed vegetables and satay sauce and

garnish with the fresh coriander or parsley.

NOTES : Satay is one of the great classic sauces of the Orient. These spicy

175 g crunchy peanut butter

1 clove garlic -- (1-2 cloves)

1 tsp chilli powder

175 ml vegetable stock -- warmed

 

Mix the first three ingredients together in a small bowl and slowly stir in

the stock.
