Recipe By :Vegetarian Times Low-Fat & Fast

Serving Size : 6 Preparation Time :0:00

Categories : Asian

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 medium shallot -- minced

2 teaspoons minced garlic

2 teaspoons minced fresh ginger root

1 hot green chili -- seeded and minced

2 teaspoons canola or vegetable oil

2 tablespoons kecap manis (sweet soy sauce)

or dark or regular soy sauce

1/4 cup coconut milk

1 pound red potatoes -- cut

into 3x1/4-inch matchsticks

1/4 cup chopped scallions

Spicy Tomato Sambal optional

1. Preheat the oven to 400F. Oil a large baking sheet or line it with parchment

paper.

2. In a blender or a food processor, puree the shallot, garlic, ginger, and

chili into a thick paste. In a large wok or skillet, heat the oil over

medium-high heat. Stir-fry the paste until fragrant, about 30 seconds. Add the

kecap manis and coconut milk. Cook for 1 minute more. (There should be about 1/2

cup of very thick sauce.)

3. Add the potato sticks and toss with two spoons to coat the potatoes

thoroughly. Spread them in one layer on the prepared baking sheet and bake until

the potatoes are tender, 30 to 35 minutes. Turn on the broiler and broil the

potatoes until they are crisp and lightly charred, about 2 minutes. (The

potatoes should be a deep mahogany color and slightly sticky to the touch.)

4. Transfer the potatoes to a bowl and sprinkle with the chopped scallions.

Serve immediately with sambal if desired.
