Mint Sambal

2 tablespoons minced fresh mint leaves

1 medium shallot -- chopped (about 1/4 cup)

1 small hot green chili -- seeded, finely minced

2 tablespoons fresh lime juice

2 tablespoons unsweetened coconut chips or shreds

2 teaspoons canola or vegetable oil

1 cup finely chopped fresh pineapple

1 tablespoon soy sauce

 

In a large bowl, mix together all of the ingredients.
