Spicy Peanut Dressing

 

Recipe By :Vegetarian Times Low-Fat & Fast

Amount Measure Ingredient -- Preparation Method

1/3 cup chunky natural peanut butter

1/3 cup coconut milk

1/4 cup lime juice

3 tablespoons chopped cilantro

1 tablespoon brown sugar

1 large garlic clove

1/2 hot green chili pepper -- seeded, roughly chopped

1 dried Thai kefir lime leaf (optional) -- crumbled

 

Place all ingredients in a blender or processor and process until smooth. Store

dressing in the refrigerator if making ahead, but bring to room temperature

before serving.

 

PER TABLESPOON: 47 cals; 1 g protein; 4 g fat; 3 g carbs; 34 mg sodium
