Summer Sesame Egg Drop Soup

6 cups vegetable broth

1 egg -- and

1 egg white -- combined, lightly beaten

1 teaspoon sesame oil

1/2 cup chopped scallions

Soy sauce

 

In a medium saucepan, bring the broth to a lively boil. In a small bowl, mix the

eggs with the sesame oil. Pour the egg mixture in a thin stream into the

bubbling broth, stirring constantly with a fork to form egg threads. When the

egg threads have formed, remove the pan from the heat and stir in the scallions.

Serve the soup with a small pitcher of soy sauce on the side.

 

PER SERVING: 44 cals; 4 g protein; 3 g fat; 4 g carbs; 35 mg chol; 1020 mg

sodium; 0 g fiber
