Guest guest Posted October 1, 2002 Report Share Posted October 1, 2002 * Exported from MasterCook * Grilled Vegetable Trio Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup oil, preferably olive 1 tablespoon dry Mediterranean or Italian seasoning 1/4 teaspoon salt 1/8 teaspoon crushed red pepper flakes (up to 1/4) 1 large bulb fennel, about 1 lb -- trimmed and cut into 1/4 " -thick slices 2 medium zucchini, about 1 lb -- trimmed and cut lengthwise into 1/4 " -thick slices 1 large red onion, about 8 oz -- sliced into 1/4 " -thick rings 2 teaspoons balsamic vinegar fennel tops, optional Prepare grill for direct-heat cooking. Combine oil, seasoning, salt and pepper flakes, using more for spicier vegetables. Arrange vegetables in single layer on baking sheet. Brush with half of oil mixture; turn and brush other sides with remaining oil mixture. Grill, in batches if necessary, turning once, until tender, 3 to 4 mins per side. Arrange on serving dish; drizzle with vinegar. Garnish with fennel tops, if desired.
