Parmesan Pasta Salad

8 ounces bowtie pasta

2 ears fresh corn -- husks and silk removed

3 tablespoons white wine vinegar

2 tablespoons extra-virgin olive oil

3 tablespoons Parmesan cheese -- grated

1 teaspoon dry Italian seasoning

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon cracked pepper

30 cherry tomatoes, about 2 cups -- halved

1 cucumber -- halved lengthwise and sliced

1 scallion -- thinly sliced

 

Prepare grill for direct-heat cooking. In pot of salted water cook pasta

according to package directions. Grill corn, turning occasionally, until

tender, 6 to 8 mins. When cool enough to handle, cut kernels from cob. Drain

pasta. In bowl combine next seven ingredients; add pasta, corn, tomatoes,

cucumber and scallion. Toss to coat.
