Guest guest Posted October 2, 2002 Report Share Posted October 2, 2002 REVIEW: dinner last night smerged two recipes 1) confetti salad (this one) and 2) orange bean salad (posted separately) This recipe was the base; replaced cabbage with romaine, added fresh herbs (basil, thyme, oregano, cilantro); and tossed in some leftover rice. mandarin oranges, mixed nuts (walnuts and pecans) .... , celery. The white beans were cooked with mrs dash, sun dried tomatoes and a little soy sauce. Some but not as much chiles It was good -- it reminded us of thanksgiving stuffing. could stuff squash with this or serve as dish at Thanksgiving. * Exported from MasterCook * Confetti Salad Recipe By :Jean Carper Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups red cabbage -- shredded 19 ounce canned white (cannellini) beans -- rinsed 11 ounce canned mandarin oranges -- drained 1/3 cup walnuts -- toasted 2 large scallions -- sliced, with green tops 3 tablespoons extra virgin olive oil 2 tablespoons balsamic vinegar 2 tablespoons orange juice Salt and pepper -- to taste Put first five ingredients in a bowl. Whisk together oil, vinegar, juice. Toss all. Serve. Serves: 6. Per serving: 196 calories, 6g protein, 19g carbohydrates, 11g fat (1g saturated), 5g fiber, 118mg sodium.
