Javanese Tomato Noodles

Amount Measure Ingredient -- Preparation Method

1 1/2 cups tomato sauce

1/3 cup coconut milk

1/2 teaspoon cayenne pepper

1 1/2 teaspoons mushroom soy sauce

or regular soy sauce

2 teaspoons chopped cilantro

1 pound wide rice noodles

or fettuccine, cooked

cilantro sprigs

 

In a medium saucepan, heat the tomato sauce, coconut milk, cayenne, and soy

sauce to a simmer. Simmer for 5 minutes. Stir in the cilantro and pour the sauce

over the hot noodles. Top with a few cilantro sprigs.

 

Makes 6 servings: Per Serving: 315 Calories; 10 g Protein, 3 g Fat; 63 g

Carbohydrates; 0 Cholesterol; 464 mg Sodium; 1 g Fiber.
