Hearty German Soup in a Crockpot

Amount Measure Ingredient -- Preparation Method

1 medium carrot -- diced

1 cup diced red or green cabbage

1 large potato -- scrubbed and diced

1 small onion -- diced

2 teaspoons caraway seeds

2 teaspoons cider vinegar

1 cup sliced vegetarian ham -- sausage, or bacon product

8 ounces tomato sauce

6 cups water

2 tablespoons barley miso

Salt and pepper -- to taste

 

Place all ingredients in a large crockpot. Cook on low for about 8 hours. Serve

with a hearty whole-grain bread.

 

Servings: 6 to 8.
