Mock Chili con Queso

Amount Measure Ingredient -- Preparation Method

Queso Spread:

15 ounces great northern beans, canned -- (about 1½

cups), rinsed well and drained

1/2 cup pimiento pieces -- drained

6 tablespoons nutritional yeast flakes

3 tablespoons fresh lemon juice

2 tablespoons (2 to 3) tahini

1/2 teaspoon onion granules

1/2 teaspoon prepared yellow mustard

1/2 teaspoon salt

1/2 teaspoon garlic powder

10 ounces (10 to 20) canned diced tomatoes and chilies -

- (use Ro-Tel brand, if available), drained

 

Chili:

3 1/2 cups water

6 3/8 ounces Fantastic Foods vegetarian chili -- (or

equivalent amount of a bulk or packaged vegetarian chili mix)

2 15 oz. cans kidney, pinto, or red beans -- (2½ cups)

drained and rinsed, or 2½ cups cooked beans

14 ounces canned diced or stewed tomatoes

 

For the Queso Spread: Place all the ingredients except canned

tomatoes in a blender, and process until completely smooth. Stir in

a can or more of the tomatoes, depending on taste. (Drain first,

reserve the liquid to add later in case you want to thin the chili);

choose the spicy variety of you want spicy chili. Set aside while

you prepare the chili.

 

For the Chili: Bring water to a boil. Add the chili mix and stir

well. Add beans and tomatoes. Reduce heat and simmer, uncovered,

for 25 minutes. Stir often, because the chili has a tendency to

stick to the bottom of the pan. Fold the " queso " spread into the

cooked chili and heat through.

Texas. Luscious. Meat eater love it. I quadrupled the recipe and

served it to forty youth one winter with great success. "

 

Best if prepared a day ahead of time so that the flavors can blend.
