Chai Oatmeal

Amount Measure Ingredient -- Preparation Method

1 1/2 cups milk

1/4 teaspoon salt

1/4 teaspoon cinnamon

1/4 teaspoon ground coriander

1/4 teaspoon ground cardamom

1/4 teaspoon ground turmeric

1 pinch saffron -- (optional)

1 drop vanilla extract -- (optional)

2 teaspoons light honey

3/4 cup rolled oats

2 tablespoons oat bran

OPTIONAL TOPPINGS: minced pistachio nuts,

yogurt, or buttermilk

 

Pour the milk into a medium-sized saucepan. Add the salt and spices, and whisk

to blend them in. Place the pan over medium heat.

 

Just before it comes to a boil, lower the heat, and let the milk simmer for

about 5 minutes. Stir in the vanilla and honey, and whisk until the honey

dissolves.

 

Sprinkle in the oats and oat bran, and stir once or twice. Cover the pan, and

leave it over low heat for about 8 minutes, stirring occasionally.

 

When the oatmeal has thickened to your liking, serve it hot with any of the

optional toppings.
