Guest guest Posted October 8, 2002 Report Share Posted October 8, 2002 * Exported from MasterCook * Cranberry Red Pepper Relish Recipe By :Cook's Illustrated (Editors) Serving Size : 6 Preparation Time :0:00 Categories : Condiments Holiday Cooking {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 red bell peppers -- cored, seeded, diced 2 cups cranberries -- coarsely chopped 1 medium onion -- finely chopped 1/3 cup apple cider vinegar 3/4 cup sugar 1 jalapeno chile (optional) 1/4 teaspoon salt 1/4 teaspoon hot red pepper flakes -- or to taste 2 yellow or green bell pepper halves (optional) -- to serve Mix all ingredients in a medium saucepan. Bring to a boil, then simmer, stirring occasionally until the mixture thickens to a jamlike consistency, about 20 to 30 minutes. Cool to room temperature. (Relish can be refrigerated in an airtight container for 2 weeks.) Yield: About 2 1/2 cups. May be served in yellow bell pepper halves.
