Carafoli Serving Size : 8 Preparation Time :0:00 Categories : Beans Soups {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounce canned shell beans -- drained and rinsed 1 large onion -- diced 2 celery stalks -- diced 1 large potato -- peeled sliced 1/2-inch Several Italian parsley sprigs -- chopped 1 sprig fresh thyme 3 tablespoons olive oil -- (3 to 4) 1 tablespoon tomato paste -- heaping 6 cups cold water Salt and pepper to taste 1/4 cup small tubular pasta (like tubetti or ditalini or orzo 8 tablespoons Freshly grated Parmesan cheese -- or double 1. Place all ingredients except for the salt and pepper, pasta and cheese in a 3- to 4-quart saucepan. Stir to dissolve tomato paste and bring to a boil over high heat. Reduce heat to low and simmer, partly covered, for 2 hours, stirring frequently. 2. Ladle 1 cup of soup into a blender and puree thoroughly, than pour it back into the soup, stirring to combine well. Season with salt and pepper to taste. Add the pasta and cook until al dente, about 5 to 6 minutes. Serve with freshly grated Parmesan cheese.
