Boston Four-Bean Bake

Amount Measure Ingredient -- Preparation Method

2 pieces meatless bacon -- (about 2 oz.)

3 stalks celery -- chopped

1 medium onion -- peeled and chopped

2 cloves garlic -- peeled and minced

16 ounces fat-free vegetarian baked beans in tomato

sauce

15 ounces canned butter beans -- or lima beans, rinsed

and drained

21 ounces canned dark kidney beans -- rinsed and drained

19 ounces canned cannelini beans -- rinsed and drained

8 ounces canned tomato sauce

4 teaspoons dry mustard

2 tablespoons brown sugar

2 tablespoons cider vinegar -- or white wine vinegar

1/4 teaspoon hot pepper sauce

 

Coat a large nonstick skillet with no-stick vegetable oil spray and

place over medium-high heat. Cook the bacon, onion, and garlic in

the skillet, stirring occasionally, for 7 or 8 minutes or until the

vegetables soften.

 

Add to the mixture in the skillet the baked beans, butter or lima

beans, kidney beans, cannellini beans, tomato sauce, dry mustard,

brown sugar, vinegar, and hot pepper sauce and toss to combine.

 

Lightly coat a 3-quart casserole dish with no-stick spray. Pour in

the bean mixture and place in a 400ºF oven. Bake for 45 minutes

until hot and bubbly.

NOTES : " Vegetables sautéed just with no-stick vegetable oil spray

get a caramel-like flavor, imparting a depth that simply putting all

the vegetables in raw with the beans doesn't provide. The dish is

still good without precooking the vegetables, and I do it that way

when in a pinch for time (or energy). "
