Pumpkin Pancakes

Amount Measure Ingredient -- Preparation Method

1 cup pumpkin -- pureed, fresh roaste

1 cup unbleached flour

1 teaspoon baking powder

1 tablespoon ground cinnamon

1 cup granulated sugar

1/2 teaspoon vanilla extract

4 large egg whites

1 tablespoon butter or margarine

 

Mix together pumpkin, flour, baking powder, cinnamon, sugar and vanilla

until well blended.

 

Mix egg whites into mixture and stir well.

 

Heat a large, heavy, non stick skillet over medium high heat and melt in

enough butter to just coat the bottom of the pan.

 

Spoon batter into skillet and gently help batter spread into 4 inch circles.

 

Reduce heat to medium and cook pancakes about 2 minutes.

 

Carefully turn and cook two to three minutes more.

 

Remove to warm platter and make the rest of the batter into pancakes,

holding first pancakes in warm oven until all are done.
