Guest guest Posted October 13, 2002 Report Share Posted October 13, 2002 * Exported from MasterCook * Pumpkin Pancakes Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Lifetime TV Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup pumpkin -- pureed, fresh roaste 1 cup unbleached flour 1 teaspoon baking powder 1 tablespoon ground cinnamon 1 cup granulated sugar 1/2 teaspoon vanilla extract 4 large egg whites 1 tablespoon butter or margarine Mix together pumpkin, flour, baking powder, cinnamon, sugar and vanilla until well blended. Mix egg whites into mixture and stir well. Heat a large, heavy, non stick skillet over medium high heat and melt in enough butter to just coat the bottom of the pan. Spoon batter into skillet and gently help batter spread into 4 inch circles. Reduce heat to medium and cook pancakes about 2 minutes. Carefully turn and cook two to three minutes more.
