Pumpkin Gnocchi

750 grams pumpkin -- peeled and de-seeded

or other orange squash e.g. butternut

125 grams flour

40 grams pecorino -- grated

or mild Cheddar cheese

50 grams parmesan cheese -- grated

1/2 teaspoon nutmeg -- grated

salt

 

Cut the pumpkin or squash into chunks and put them in a saucepan or steamer

with a little water. Cover and simmer for about 15 minutes or until soft.

 

Tip the pumpkin into a sieve and squeeze out as much liquid as possible by

pressing with the back of a wooden spoon.

 

Turn the pumpkin into a bowl and mash the pulp until it is smooth.

 

Add all the remaining ingredients to the pumpkin, season with salt and mix

well. Cover and chill in the refrigerator for at least 20 minutes.

 

Using plenty of flour, shape the mixture into small cherry-sized balls no

more than 2cm (3/4 inch) in diameter. Place them spaced well apart on a

floured surface.

 

Bring a large saucepan of salted water to the boil and add the gnocchi. Cook

for 3-5 minutes or until the gnocchi rise to the surface and the water

starts to boil again, then remove the gnocchi with a slotted spoon and put

them in a warmed serving bowl.

 

Serve immediately, with cream or the sauce of your choice.

NOTES : This recipe is for a lighter and more refined version of gnocchi

with an agreeable spicy flavour. They are best served with a light sauce

with just a little single cream poured over them.

 

The smaller the pumpkin, the more flavourful the resulting dish.
