One more from the Bon Ton Cafe in New Orleans. We almost never eat

foods like this, but it came with dinner, and well, we indulged. This

was more than worth the indulgence! It was very custardy and rich,

yet not too sweet. A little bit of sauce is all that's needed.

 

The food at the Bon Ton is based on old traditional Cajun family

recipes. It is the first Cajun restaurant in New Orleans, and they

brag that they were the first to challenge the popular Creole cuisine

in the city.

Bread Pudding with Whiskey Sauce

Amount Measure Ingredient -- Preparation Method

Bread Pudding:

1 loaf French bread

1 quart milk

3 eggs

2 cups sugar

2 tablespoons vanilla

3 tablespoons margarine

1 cup raisins

Whiskey Sauce:

1 stick margarine

1 cup sugar

1 egg

whiskey -- to taste

 

Soak bread in milk; crush with hands till well mixed. Then add eggs,

sugar, vanilla, and raisins and stir well. pour margarine in bottom

of thick pan and bake until very firm. Let cool; then cube pudding

and put in individual dessert dish; when ready to serve, add sauce

and heat under broiler. Serve with Whiskey Sauce.

 

Whiskey Sauce:

 

Cream the sugar and egg until well mixed. Add melted margarine and

continue to dissolve. Add whiskey to taste which should make sauce

creamy smooth.
