Guest guest Posted October 14, 2002 Report Share Posted October 14, 2002 * Exported from MasterCook * Tofu Pumpkin Pie Recipe By :Kathy Duran, Cooper Aerobic Center Serving Size : 1 Preparation Time :0:00 Categories : Good Morning Texas Pies & Pastries Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- no-stick butter flavored spray 1/4 cup graham cracker crumbs 10 ounces firm tofu 1 16 ounce can pumpkin 3/4 cup granulated sugar 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves Heat the oven to 425 F. Spray pie pan with no-stick butter flavored spray. Pour graham cracker crumbs into bottom of pie pan and spread evenly. Re-spray crumbs lightly with no-stick spray again. Cream together the pumpkin and sugar. Add the salt, spices and tofu, mixing until thoroughly blended together. Pour into prepared pie pan. Bake at 425 F for 15 minutes. Lower the heat to 350 F and bake for an additional 40 minutes.
