Guest guest Posted October 15, 2002 Report Share Posted October 15, 2002 Beets in Lemon Sauce 1 can quartered or diced beets with juice 2 Tbsp. lemon juice 1 tsp. salt (scant) 2 Tbsp. honey 2 Tbsp. arrowroot, tapioca starch or corn starch. 1/4 cup cold water Heat beets, juice, lemon juice, salt, & honey. Mix thickener in 1/4 cup cold water until dissolved. Pour into hot beet mixture and heat until juice thickens and becomes clear. Ready to serve. This is really pretty put into small clear bowls.
