Beets in Lemon Sauce

 

1 can quartered or diced beets with juice

2 Tbsp. lemon juice

1 tsp. salt (scant)

2 Tbsp. honey

2 Tbsp. arrowroot, tapioca starch or corn starch.

1/4 cup cold water

 

Heat beets, juice, lemon juice, salt, & honey.

Mix thickener in 1/4 cup cold water until dissolved. Pour into hot beet mixture

and heat until juice thickens and becomes clear. Ready to serve. This is really

pretty put into small clear bowls. Low fat and very delicious.
