Soak the rice flour in the soy milk for at least 1 hour. 2. Separate the eggs and beat the egg whites in a large bowl until very stiff. 3. Add the rice flour and milk to the egg whites along with the egg yolks, herbs, salt and baking powder. Gently mix, being careful not to beat out the air from the egg whites. 4. Place the mixture in a greased 2-lb pudding basin (ovenproof bowl) and cover the bowl with a piece of greased foil, pleated in the middle to allow the loaf to expand. Tuck the foil well under the rim of the bowl and steam in a pressure cooker for 20 minutes or over a pan of boiling water for 1 hour 20 minutes. 5. Remove the foil and allow the loaf to cool for 10 minutes. Loosen the sides of the loaf with a knife, turn out on a wire tray and allow to cool. Keep in an airtight container and eat within 3 days. This recipe, however, produces a loaf which has the texture of bread and a good flavour. The recipe is based on one given to me by a Philippine patient who adapted a traditional recipe. Vary the flavor by substituting herbs such as aniseeds, fennel seeds, caraway seeds, thyme, rosemary and marjoram. Nutr.
