Pumpkin Seed Pesto

Amount Measure Ingredient -- Preparation Method

2 poblano chiles -- roasted, peeled, and seeded

1 1/2 cups pumpkin seeds -- well toasted

4 peeled garlic cloves

1/2 bunch cilantro leaves and stems

2 limes -- juiced

Salt to taste

1 teaspoon nutritional yeast

2 tablespoons yellow miso (optional)

Water as neeed

 

Blend all ingredients in a food processor. Thin with the water to a spreadable

paste. Use or store airtight for up to four days.

 

Per serving: 124 calories, 6 g protein, 18 g carbohydrates, 4 g fat, 0

cholesterol, 258 mg sodium, 2 g fiber. Calories from fat: 29 percent.
