Pumpkin Soup

2 tablespoons butter

2 green onions -- chopped

1/2 cup chopped celery

1 tablespoon tomato paste

1 bay leaf

2 cups cooked mashed pumpkin or canned pumpkin

2 cups beef broth

3/4 cup light cream

1/2 teaspoon salt

1 Dash pepper

Nutmeg

parsley -- chopped

 

Melt butter in large pan, add onion and celery, saute until soft but not brown.

Add tomato paste, bay leaf, pumpkin, and broth, simmer for 30 minutes. Press

through a wire strainer. Add cream to strained soup and heat to boiling point,

but do not boil. Simmer five minutes. Add salt and pepper, seasoning to taste.

Serve hot with dash of nutmeg and sprinkle with parsley.

 

Per serving: 249 calories, 10 g protein, 19 g carbohydrates, 16 g fat, 46 mg

cholesterol, 1,159 mg sodium, 6 g fiber. Calories from fat: 56 percent.
