Sweet and Sour Pumpkin

35 ounces red wine vinegar

5 ounces cinnamon

1 pumpkin -- seeded, peeled, and cut into square pieces

cinnamon -- freshly ground

clove -- freshly ground

Fresh thyme

nutmeg -- freshly grated

Bay leaf

 

Boil the vinegar and cinnamon, set aside and let cool. In a jar, add pumpkin,

then freshly ground cinnamon, clove, thyme, nutmeg, and bay leaf. Add more

pumpkin, then more spices, and continue this layering until jar is full. Pour

cooled vinegar solution over mixture, cover and let sit for 10-12 days.
