In a jar, add pumpkin, then freshly ground cinnamon, clove, thyme, nutmeg, and bay leaf. Add more pumpkin, then more spices, and continue this layering until jar is full. Pour cooled vinegar solution over mixture, cover and let sit for 10-12 days.
