Guest guest Posted October 28, 2002 Report Share Posted October 28, 2002 * Exported from MasterCook * Cincinnati " Chili Mac " Recipe By :Nava Atlas Serving Size : 6 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil -- optional 1 cup chopped onion 1 medium green bell pepper -- diced 1 medium red bell pepper -- diced 1 small fresh hot chile -- seeded and minced (optional) 14 ounces (14 to 16) canned diced tomatoes 14 ounces (14 to 16) canned crushed tomatoes 4 cups cooked red or pink beans -- (about 1-2/3 cups raw), or 2 1-pound cans, drained and rinsed 1 teaspoon (1 to 2) chili powder -- to taste 1 teaspoon ground cumin 1 teaspoon dried oregano 1/2 teaspoon ground cinnamon 1/4 teaspoon ground allspice -- optional 8 ounces (8 to 10) spaghetti Garnishes (all optional): Diced ripe tomatoes -- optional Chopped onion or scallions -- optional Grated cheddar cheese, reduced-fat if desired, or cheddar-style soy cheese -- optional Heat the oil (or a small amount of liquid) in a large saucepan or stir-fry pan. Add the onion and sauté over medium heat until translucent, then add the bell peppers and continue to sauté until the onion is golden (or wilted). Stir in the remaining ingredients except the spaghetti and garnishes and bring to a simmer. Simmer gently, covered, for 20 minutes. In the meantime, bring water to a boil in a large pot. Cook the spaghetti until al dente, then drain. For each serving, place a small amount of spaghetti in a wide, shallow serving bowl and top with some of the chili. If desired, top with any or all of the suggested garnishes.
