Blue Cheese Dip with Tofu

Amount Measure Ingredient -- Preparation Method

8 ounces lite soft tofu -- drained

3 tablespoons cider vinegar

1/2 cup nonfat yogurt

1 teaspoon safflower oil

1 garlic clove -- minced

1/4 teaspoon white pepper

3 ounces blue cheese

 

Puree all ingredients in blender or food processor. Pour into a serving bowl and

chill for several hours. Serve with raw vegetables.
