Guest guest Posted October 30, 2002 Report Share Posted October 30, 2002 * Exported from MasterCook * Pasta Nicoise Recipe By :Jan Wolff, Food Writer, New Jersey Serving Size : 8 Preparation Time :0:00 Categories : Pasta {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh green beans -- trimmed; 1-inch pieces 1 pound red potatoes -- scrubbed; 1-inch pieces 1 tablespoon salt 1 pound dried pasta (penne or bow ties work well) 2 tablespoons olive oil 2 cloves garlic -- minced 1 medium onion -- peeled and chopped 28 ounces whole peeled tomatoes (preferably organic) -- (Canned) 20 kalamata olives -- pitted and chopped 2 tablespoons balsamic vinegar 1/2 teaspoon freshly ground black pepper 6 leaves fresh basil (optional) -- chopped (6 to 8) In a large pot, bring 4 quarts of water to a boil. Add green beans, potatoes, salt, and pasta. Stir gently to prevent sticking. Cook until al dente, about 12 minutes. Meanwhile, in a large skillet, heat oil over medium heat. Add garlic and onion. Sauté 5 minutes, until onion is soft. Stir in tomatoes and olives. Break up large tomatoes with the edge of a spoon. Simmer 5 minutes for flavors to blend. Add vinegar, pepper, and fresh basil. Drain pasta and vegetables. Combine in a large serving bowl with tomato mixture. Serve hot. Servings: 6 to 8. Description: " vibrant flavors of a French nicoise salad. When preparing pasta, you should use at least 4 quarts of water for every pound. One pound will give you about 15 minutes to create a delicious vegan topping for the pasta. The purple kalamata olives are a tangy substitute for anchovies. A crisp green salad and a loaf of good Italian bread will round out the meal.
