Guest guest Posted October 31, 2002 Report Share Posted October 31, 2002 if using ready-made dough, check the label to make sure it's vegetarian. * Exported from MasterCook * Baked Holiday Cranberry Brie Recipe By : Serving Size : 24 Preparation Time :0:00 Categories : Appetizers Holidays {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 9 ounces refrigerated pie crust dough or puff pastry 15 ounces brie cheese (1 wheel) 1/3 cup pecan pieces 1 cup Boston Market brand Cranberry Nut Relish 1 egg white -- beaten with 1 tablespoon water -- optional 24 baguette slices -- toasted or water crackers 1. Preheat oven to 400F. Place pie crust dough or puff pastry on baking sheet; roll out to smooth folds. Place brie cheese in center of dough; top with pecans. Carefully spoon 1/2 cup cranberry nut relish over pecans spreading up to 1/2-inch from edge of brie. 2. Roll out remaining pie crust dough and cut into 3/8-inch wide strips. Arrange strips over the brie, forming a lattice design. Trim excess pastry strips and moisten lattice edges with water. Bring remaining dough up over lattice, being careful not to tear. Crimp edges at 1-inch intervals to completely seal. Liberally brush with egg wash if desired. Cover with plastic wrap and refrigerate until serving time. 3. If using puff pastry, encase brie and bake at 400 degrees about 20 minutes. 4. Let brie stand at room temperature 10 minutes before baking Bake 30 minutes or until crust is golden brown. Remove from oven. and let cool 10 minutes. Place remaining 1/2 cup cranberry nut relish in a small bowl. Using a spatula, lift brie onto a cutting board. Serve immediately, surrounded by toasted baguette slices or crackers. Serves 12 to 24. RELISH Substitute: 16 oz canned whole berry cranbery sauce; 1/4 English walnuts, Zest of 1 orange, sugar or sweetener to taste. Coarsely chop cranberries and nuts in food processor. Add orange zest and sweetener to taste. Cover and put in refrigerator at least 2 hours before serving.
