Spicy Black Bean Burgers

30 ounces canned black beans -- rinsed

1 large egg

1/4 cup seasoned bread crumbs

1 teaspoon chili powder

2 tablespoons vegetable oil

SANDWICH:

4 toaster corn muffins

1/2 cup lowfat sour cream -- divided

1/2 cup mild salsa -- (or hot salsa)

4 small lettuce leaves

Cherry tomatoes -- for garnish

 

Put beans, egg, bread crumbs and chili powder in a large bowl. Stir to mix, then

mash lightly with a potato masher or pastry blender until almost all of the

beans are crushed.

 

2. Wet your hands with cold water; divided equally, and shape into 1/2-inch

thick patties. Heat oil in a large nonstick skillet over medium high heat. Add

patties and cook 4 minutes on the first side; turn and cook 3 minutes until

through and crusty.

 

3. While the patties cook, toast muffins and put on serving plates. Open face

sandwiches: top each muffin with a tablespoon each sour cream and salsa; cover

with a lettuce leaf. Top with the bean patty, then garnish with remaining sour

cream and salsa. Serve with tomatoes.
