Souper Jenny's Wild Mushroom and Artichoke Soup

4 tablespoons extra-virgin olive oil

2 cups chopped onion

2 cups chopped celery

1 cup chopped carrot

2 cups diced shiitake mushrooms

2 cups diced oyster mushrooms

2 cups sliced domestic white mushrooms

1 cup dry sherry

8 cups vegetable stock

2 cups chopped artichoke hearts

(water-packed canned, well rinsed)

Fresh parsley -- chopped

Salt and pepper -- to taste

Cream (optional)

 

Heat oil in Dutch oven over medium-low heat. Add onion, celery and carrot and

saute until softened, about 10 minutes. Add shiitake, oyster and white mushrooms

and cook until most of the water is evaporated, about 7 minutes. Add sherry and

cook 5 minutes. Add vegetable stock; cover and cook on low heat for 25 minutes.

Add artichoke hearts, parsley and salt and pepper, to taste. Simmer for 5

minutes until heated through. Add a touch of cream if desired.

 

Per cup: 122 calories, 4 grams protein, 6 grams fat (percent calories from fat,

42), 13 grams carbohydrates, no cholesterol, 85 milligrams sodium, 4 grams

fiber.
