Guest guest Posted November 3, 2002 Report Share Posted November 3, 2002 * Exported from MasterCook * Grilled Tortellini Salad Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 small zucchini -- scrubbed and halved lengthwise 6 scallions -- washed and trimmed 1 green bell pepper -- halved and seeded 1 sweet red bell pepper -- halved and seeded 1 fresh red chile -- 4-6 inches long, halved - (or to taste) 16 ounces cheese tortellini 1 pint fresh cherry tomatoes DRESSING: 1/3 cup olive oil 1/2 cup dry sherry 2 tablespoons wine vinegar 1/4 cup minced fresh basil -- or 4 teaspoons dried 2 cloves garlic -- crushed 1 teaspoon freshly ground black pepper 1/2 teaspoon sea salt Place the zucchini, scallions, green and red bell peppers, and chile in a large glass dish and set aside. Prepare the dressing by whisking together the oil, sherry, vinegar, basil, garlic, black pepper, and salt in a small bowl until well emulsified. Pour the dressing over the vegetables. Lightly oil the grill and heat to medium-low. Reserving the dressing, remove the vegetables from the bowl with a slotted spoon, and place them in a single layer on the grill. Cook, basting frequently with the dressing, until the vegetables are golden brown on all sides (12 to 15 minutes). Cook the tortellini until al dente according to package directions. Drain, rinse under cold water and drain again. Transfer to a large shallow salad or serving bowl. Stir a small amount of the dressing into the tortellini to prevent the pasta from sticking together. Slice the grilled vegetables into small pieces and add to the tortellini along with the remaining dressing. Toss the salad gently, garnish with fresh cherry tomatoes and serve warm.
