Spinach Salad with Persimmons, Dried Cranberries and Pecans

Amount Measure Ingredient -- Preparation Method

3 cups young spinach leaves -- torn into bite-sized pieces

1/2 bunch scallions -- thinly sliced

1 Fuyu persimmons -- cut into 1/2-inch wedges

1/2 cup dried cranberries -- soaked in

1/2 cup hot water -- for 1 hour, reserved

FOR DRESSING:

1 teaspoon curry powder

1 tablespoons reserved cranberry soaking liquid

2 tablespoons fresh lemon juice

1 1/2 teaspoons balsamic vinegar

2 teaspoons olive oil -- see review

2 tablespoons fresh orange juice

Salt and freshly ground pepper -- to taste

OPTIONS:

1/4 cup unsweetened shredded coconut (or)

2 tablespoons chopped pecans -- toasted

 

In a large bowl, combine spinach, scallions, and persimmon wedges. Drain

cranberries, reserving 2 tablespoons soaking liquid, and add to spinach mixture.

 

In a small bowl, whisk curry powder, reserved cranberry soaking liquid, lemon

juice, vinegar, and olive oil together. Add salt and pepper. Toss spinach

mixture and garnish with with coconut or pecans.

 

REVIEW: Wonderful flavors. We used pecans; next time we will try the unsweetened

coconut. We prepared the recipe to serve 2 as a main dish with french bread.

Would serve 4 as side salad. The recipe was modified as follows: instead of 6

tablespoons of olive oil, we used 1 teaspoon each and added orange juice to make

up for the lost moisture. And we doubled the amount of curry. We also aged the

salad 30 minutes.
