Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 a veg soup with fruit might be a healthy way to start a holiday feast. this is carrot turnip puree with orange and tarragon; garnish with slivered fresh plum and a spicy-herb butter. * Exported from MasterCook * Carrot Soup with Plums Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SEASONED BUTTER: 1 tablespoon honey 3 tablespoons melted margarine 2 tablespoons prepared mustard 2 tablespoons chopped fresh parsley -- may double amount 1 tablespoon chopped fresh tarragon -- may double amount 2 tablespoons orange zest SOUP: 1 pound small baby carrots -- peeled, halved lengthwise 2 small turnips -- trimmed, peeled, diced 2 cups fresh orange juice 4 cups vegetable stock or unsweetened apple juice salt and pepper 6 plums (6-8) -- pitted, thinly sliced 4 tablespoons fresh orange juice Boursin cheese 1. In a small bowl or cup, blend the honey, margarine, mustard, parsley, tarragon leaves, and orange zest. Set aside; do not refrigerate. 2. In a soup kettle or Dutch oven, combine the carrots, turnips and orange juice, Bring to a boil, then reduce to a simmer, cover atightly and cook about 10 minutes. 3. Add the vegetable stock and continue to cook, stirring occasionally, for about 10 to 15 minutes or until the carrots and turnips are tender. 4. In the container of a blender or food processor, puree the carrot mixture in batches until smooth. Return to the pot, heat through and adjust the salt and pepepr to taste. 5. Ladle the soup into bowls, and garnish with a share of the honey-margarine mix and sliced plums. Serve immediately.
