Cubed Garlic Yams

4 medium yams or sweet potatoes

4 teaspoons soy sauce

3 tablespoons Chinese-style Vegetable Stock (p. 5)

3 tablespoons sugar

1 tablespoon sesame oil

3 tablespoons water

1 tablespoon garlic -- minced

1/4 teaspoon pepper

 

Peel and cut yams into 1/2 in cubes, then rinse and drain well.

 

In medium saucepan combine soy sauce, stock, sugar, sesame oil, water and

garlic, mixing well. Add yams and bring to boil.

 

Lower heat to medium. Cover and simmer for about 10 mins or until yams are just

becoming tender, stirring occasionally. If necessary, add water to prevent

sauce from burning.

 

Uncover and bring to boil over high heat. Cook, stirring, until all liquid is

absorbed and the yams are glazed, about 5 mins. Season with grindings of black

pepper. Serve warm or cold.

NOTES : Very often at the beginning of a Chinese meal some small snacks will be

served to whet the appetite. This dish is not particularly traditional, but I

like it for its sweet flavour. It reminds me of the roasted yams that I used to

buy on the street in Hong Kong.
