Sesame Spinach

Amount Measure Ingredient -- Preparation Method

4 cups water

2 pounds spinach leaves -- washed and trimmed

1 tablespoon sesame oil

1/4 teaspoon salt

1 tablespoon sesame seeds -- toasted

 

Bring water to boil. Add spinach and blanch for 1 min or until leaves are just

wilted. Drain and rinse under cold water until spinach is thoroughly cooled.

Drain well and squeeze spinach in clean, dry towel to remove excess moisture.

 

Place spinach in medium bowl and sprinkle on sesame oil and salt. Stir to mix

well.

 

Sprinkle with sesame seeds for garnish and serve.
