But I don't have MC , can I don't post recipes. My computer is from my office, so I can't install the software. But boy do I have ideas for you!! I hosted Thanksgiving last year- which I think scared everyone because they knew I wouldn't be cooking meat. I prepared the whole week before.. the in-laws were coming and everything! ( they are definately not used to my style of cooking- ( neither is my own family but they see it more often) There's ofcourse those people who can't go a sinlge thanksgiving without turkey, mashed potatoes, stuffing and gravy and corn.( two of my sisters) So I asked my mom to brign the turkey ( all cooked that morning) Then I literally did the rest! Here was the menu with some breif descriptions- very non traditional, but i thought it was even better: We started with Brocolli soup with RedBell pepper puree. ( this is a low fat soup- you 'd never guess. it looks like pea soup- but it's mostlyjust brocolli, pureed with simmered onions, garlic and spices. Then a roasted red bell puree goes on top of the green and makes a swirl- just for decoration ( ok and yummytaste) I was surprised how much the in-laws loved it! This soup was from Vegetarian Times 30 best lowfat recipes. Then we moved to salad.. A mesclin mix with beets, toasted almond slivers and goat cheese- with a lemon vinegrette.And fresh black pepper. One of my sisters kept eating more salad- even after the meal.. I do beleive I got this recipe from this list! Mashed sweet potatoes were there- several ways to make them- with orange juice, or maple syrup- whatever. Always a hit- but some still prefer the ooey gooey candied yams. Then- this has become my personal tradition, tha tmy mom loves so much that I make it every year and she takes home any leftovers. This comes from a vegetarian Times issue 2 full year ago i beleive. the thansgivign issue. I beleive it's the wildrice and pecan stuffing. Bu tit's so much more than that. Your are supposed to pick a squash- butternut, or acorn or something and put the stuffing in it. Well half my family doens' tliek squah ( weirdos) so I make it without hte squahs now- but it's much more beautiful in the squash on the plates. People flip! it's wildrice and brown rice simmered in veg broth, red , yellow and orange peppers, celery, apples, raisins, sage, rosemary, thyme, parsley, garlic- you name it- it's in there. It's a flavor fiesta!! It has tamari, umeboshi and apple cider vinegars at the end to add some kick. I personally feel that the combo of this stuffing and a squash is perfect for the main course. ( then you woulnd't need the sweet potatoes really ofcourse) ( IMAGINE JUST VEGETARIANS -AND THE SOUP , THE SALAD, THE SQUASH ALL STUFFED... WHAT PRESENTATION, COLORS AND TASTE! what's more all are vegan- remove cheese form salad) I'm not the cook this year- i'm sure i'll starve. lol. yup- i'll eat the mushy " green bean casserole " made with campell soup and french onions someone always brings-yuk) There were other vegies at the table for the fussy ones- carrots, cream corn for th elittle sis, and instant mashed potatoes for her as well- she won't eat a yam.) **sigh**She's 23- she also won't eat tri colored pasta.( nothing mixed) From what I heard- the turkey was dry anyway.. ( poor mom) The inlaws said it was somethign sooo different, they really loved it and they ate everything and just couldn't beleive this is they way we eat. Now they aren't so worried about their son! haha If you are looking to replace the turkey- there's a baked marianted tofu dish o got from this group. I make it often and I thought just last week i may make it for thanksgiving for some protein for myself..) Also- if you're in one of those italian houses where pasta needs to be at thanksgiving- I have a recipe for jalepeno-pumpkin stuff shells with rosemary cram sauce. ( these were yum!) I'm excited already- i'll live vicariously through you this year, ok?? haha Anyone- let me know which recipes you are interested, i'll look themup here at home, give you the sources and you can find them with MC i think right? yumyum!! and goodluck! LOL ( and help me cook!) wouldn't that be fun?? haha Anyway- Anyone with MC who feels nice neough to post for the group- here's some information on the recipes I mentioned. The Brocolli soup is fromVegetarian Times October 1999 ( i can't belive i've been making it this long??) October issue- 25 best low fat recipes ever. The November 1999 VT issue full of different squahes and different stuffings- so you could mix and match the stuffing and the squash. The one i love is: Basmati with wild rice stuffing-you'll be drooling just reading th eingredients. I used butternut squash- but i just had acron squah the other day and i love it- this year i think i would use that- plus it fits on plates better and i like the dark green outside. Guest guest Posted November 13, 2002 Report Share Posted November 13, 2002 OK- the tofu was posted on Feb 7th, 2001- called sweet ginger tofu ( Ellen C posted it) Source was the modern vegetarian kitchen. I'd say this truly does feed 4, too.- that helps to know! Usually when it's done, it's still in a lot of liquid for me, so it'snice- it's liek a gravy you can pour over mashed potatoes or over the tofu.. and it's in slices- like skinny meatloaf or umm.. salisbury steak- yeah that's the stuff. I make mine extra garlicky and gingery. ( always!) My fiance doens't liek to eat plain tofu- but he goes nuts oer this stuff. really. salad posted by my pal Pat H ( kitpath) on september 28th, 2001. called beet salad with montrachet and nuts. I liek this one becasue of the colors.. I don't really follow the recipe except for the dressing. but it's a alad- so you know- i just use the key ingrediets. no need measuring cups of leaves and such! whatever... haha I also don't cook the beets first- i buy cooked sliced beets canned or jarred in vinegar but no sugar ... it;s easier. you have enough work on thanksgiving. looks like the pumpkin shells stuff was from a private source- i'll find it- don't you all worry! Unfortunately my hd crahsed a month ago and i am now missing a bunch of stuff... basically i think they were caled pumpkin stuffed shells...!!! My two cents... this has a lot of potential- my fiances and i would have liked it hotter and the sauce alittle more flavorful...and maybe thinner- the sauce - too... but you can't beat this really- try it first and then doctor it up.. i may try this again soon myself. infact- this year my in laws are doing thanksgiving ( very italian) so maybe i'll make this one to bring. I also have a no sugar added apple pie recipe that ROCKS..., i always make oatmeal cookies from the recipe on the quaker oats lid ,and choco chip cookies from the recipe on the back of the tollhouse chip bag- can't get easier or better than that.. exceprt for my home made ginger snaps...
