Guest guest Posted November 15, 2002 Report Share Posted November 15, 2002 * Exported from MasterCook * Macaroni with Ricotta Sauce Recipe By :Jo Ann Shirley Serving Size : 4 Preparation Time :0:00 Categories : pasta sauce send Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion--chopped 4 tablespoons olive oil 1 pound ricotta cheese 1 cup tomato puree' 1/2 cup tomato paste 1 1/2 cups water salt and pepper 4 tablespoons grated Romano cheese 1/2 pound short macaroni Saute' the onion in the olive oil until golden brown. Add ricotta, tomato puree', tomato paste and water and mix thoroughly. Season with salt and pepper to taste and cook over a low heat for about one hour, stirring occasionally. Cook macaroni in boiling salted water until tender. Drain. Put into a serving dish. Pour sauce over the macaroni and sprinkle with grated cheese.
