Black Bean Watercress Saute

Amount Measure Ingredient -- Preparation Method

1/2 pound watercress (2 large bunches) -- thick stems removed

1/2 lemon -- remove seeds

1/3 cup vegetable broth

1/2 small onion -- minced

15 ounces canned black beans -- rinsed

 

1. Mince the lemon, include rind.

 

2. Saute all the ingredients in a large frying pan over medium heat for 8

minutes. Serve warm.

 

VARIATION: replace watercress with any fresh leafy green.
